How is olive oil produced?

It all starts in the plantation. Olive trees take approximately five years to start fruiting.  The entire harvest is practically made by hand. After a strict quality control, the olives are pressed to extract the juice and then the oil is ready to be bottled. In some cases, olive oil can also be refined, and this process takes place with no chemicals added. To ensure quality of olive oil, the whole process should be quick, i.e., 24 hours maximum from harvest to bottling.
